(75 g) chopped nuts
((walnuts or pecans work well))

1
large egg
(beaten)
-
2/3
cup
(160 ml) buttermilk
-
1
fresh, ripe orange
-
1/4
cup
(59ml) unsalted butter
(melted)
-
1
tsp
(5ml) vanilla extract
-
Zest of 1 orange
(optional)
Instructions
-
Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
-
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda and salt. Gently fold in the chopped cranberries and nuts until they are evenly distributed throughout the dry ingredients.
-
Cut the orange in half. Use a citrus juicer to extract the juice from the orange halves. Pour the extracted juice into a measuring cup. Stop when you reach the 1/3 cup (75 ml) mark.
-
In a separate bowl, combine the beaten egg, buttermilk, orange juice, melted butter, vanilla extract and orange zest (if using).
-
Make a well in the center of the dry ingredients and pour the wet ingredients into it. Gently fold the mixture until just combined. Pour the batter into the prepared loaf pan, spreading it evenly.
-
Bake in the preheated oven for 55-60 minutes or until a toothpick inserted into the center comes out clean. The top should be golden brown. Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
-
Once the cranberry nut bread has cooled, slice it into desired thickness. This bread is delicious on its own or spread with butter or cream cheese.
