Ingredients

  • 1/2 cup (1 stick/113g) unsalted butter (melted)
  • 1 tbsp (15ml) white vinegar
  • 1 cup (200g) granulated sugar
  • 3 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1g) salt
Instructions
  1. Preheat the oven to 350°F (180°C).
  2. In a bowl, whisk together the coconut filling ingredients until well combined.
  3. Pour the coconut filling into the pie crust in the pie dish. Bake in the preheated oven for 60 minutes or until the center is set and the top is golden brown.
  4. Allow the coconut pie to cool completely before slicing. Optionally, garnish with additional shredded coconut or whipped cream before serving.
