Ingredients
  • 1/2 lb (70g) chicken breast (minced)
  • 6 cup (1440g) chicken broth
  • 1 can (225g) creamed corn
  • 1 can (225g) sweet corn kernels (drained)
  • 1 tsp (4g) sugar
  • 1 tsp (5g) chicken essence
  • 1 tsp (6g) salt
  • 2 tbsp (20g) cornstarch
  • 1/4 cup (60g) water
  • 1 egg (beaten)
  • Chopped scallions (for garnish)
Instructions
  1. Add the chicken breast and chicken broth in a large pot over medium-high heat. Bring it to a boil. Simmer for 5 minutes or until chicken is cooked through.
  2. Pour in the creamed corn and sweet corn kernels, stirring well to combine. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 2 minutes. Add sugar, chicken essence, and salt.
  3. In a bowl, mix cornstarch and water to make a cornstarch slurry. Pour the cornstarch mixture into the soup and stir well to thicken the soup slightly.
